STAR Sharpening

Truly professional culinary knife sharpening is now available to Sacramento and the greater Central Valley.  STAR sharpening service now offers professional knife sharpening to both the professional and home chef.  The unprecedented system provides a perfect mirror edge to all knives, including serrated!  The patented system and equipment, invented by an engineer with a passion for knives, is like nothing else offered in the area.  Providing this service in the valley, is former professional chef and foodservice executive, Dominique Besson. 

Mr. Besson brings with him over 30 years of experience.  Originally from France, Mr. Besson began his career as a chef in Paris after completing culinary college in France. Following 20 years as a chef, he joined the gourmet kitchenware industry here in the United States as an executive for 14 years.  In 2007, after completing full training with the inventor of this system, he decided to take his expertise “on the road” offering mobile culinary sharpening in the Sacramento and Stockton areas. 

Currently, STAR Sharpening is keeping blades sharp at many fine Sacramento and Central Valley restaurants and resorts.  The service is also available to the public at drop-off locations such as East Bay Restaurant Supply, and William Glen in Sacramento as well as Fiori’s Butcher Shoppe in Lodi and Beyond Pots and Pans in Stockton.

While other sharpening systems use stones or pull-through devices which actually remove more metal than necessary, and create an unfinished and short lived edge, the STAR Sharpening system uses a complete series of highly engineered belts and counpound wheels to create a mirror edge which lasts for a very long time.  

This service is also available for scissors, food processor and mandolin blades, as well as serrated knives.  Serrated knife service is truly amazing as the system is able to sharpen each individual serration, and even re-serrate a knife with no visible “teeth” left on it!  Other systems cannot do this, and can only shave off metal from the back of such a knife.  STAR Sharpening can also repair and restore any broken or chipped knife and create a new shape where one is needed.
